(Note to self: The phrase "never say never" was coined for a reason. This exact reason.)
Because I'm thinking about going gluten-free.
|Luckily I happen to already own a copy of this cookbook. It's fate.|
Before you either squeal with delight or attempt to punch me in the face, hear me out: I had my thyroid partially removed in 2008 (super-sexy, I know) and am willing to do whatever it takes to keep my ol' endocrine system functioning normally and without medication. This was a big motivator for me becoming vegan in 2011 in addition to ethical reasons. I've been doing some research linking gluten to hypothyroidism, which I'm at risk for with the half of a thyroid I have left.
I'm supposed to be getting my thyroid levels tested every year, but let that fall to they wayside while I was living in the middle of nowhere. (You might too if you had to drive an hour and a half to a doctor...sigh.) So I won't be making any decisions before I speak to my doctor, but in the meantime I'll be trying out all the gluten free beers I can. Gotta make life worth living, right?
