Yum. I adapted this from a Lime-Cilantro dressing in Mexican Everyday. Use it in wraps, on salads, over enchiladas...anything. It's that delicious. It keeps for a long time as well. Muy perfecto!
3/4 cup vegetable oil/olive oil
1/3 cup lime juice
1/2 cup (packed) chopped cilantro*
1 cucumber, chopped*
1/2 teaspoon salt
Combine ingredients in a food processor or blender and puree until smooth. Add more salt if desired. Refrigerate in a jar with a tight lid, and shake well before use.
